Stir Fry Jackfruit

Food is an expression of your individuality, history, values and beliefs. Therefore, I appreciate vegan foods from time to time. In addition, eating vegan at some stages of my life helps me with digestive system restoration and helps me connect closer with my spiritual beliefs.
I am now sharing one of my favourite homemade vegan recipes made with jackfruit. Jackfruit is a tropical tree fruit grown in Asia, Africa and South America. The fruit also contains vitamins, minerals, and phytochemicals that have health benefits. For example, potassium, fibre, and antioxidants are highly beneficial for heart health.

The stir fry jackfruit recipe is delicious, and you should give it a try even if you're not vegan!
Ingredients:
Can of jack fruit on brine - 1 can of 400g
Onions - 2 onions, one red and one brown.
Red Capsicum - 1 unit
Broccoli head - 1 unit
Olive oil.
Thyme.
Salt.
Instructions:
Cut the vegetables as you prefer. Meanwhile, heat the saucepan,
Add the olive oil and thyme to the heated pan and fry the onions.
Add the jack fruit and the salt and stir it up for 3 minutes.
Add the broccoli and stir it up for another 3 minutes.
Add the capsicum to finish.
Cover for 3 minutes before serving.

I love eating stir fry jackfruit with quinoa and black beans. I hope you enjoy this recipe :)
